This ultra-rare “Elephant Bean” grows in tiny quantities, cared for by farmers who protect not just their crops, but the rainforest surrounding them. Through a remarkable 108.4-hour carbonic maceration natural fermentation, the coffee develops bold notes of caramelized honey, juicy bubblegum, black cherry, and jasmine, wrapped in a silky, jammy finish.

Plum Sauce is more than a coffee—it’s an expression of passion from the highlands of Jinotega. This washed microlot dazzles with bright stone fruit, citrus, and delicate florals, leading into a silky, honeyed finish.
As it cools, the cup evolves beautifully from warm prune and plum sauce into blackberry, rose, saffron, and jasmine.
Grown by María Maritza Castro—one of the few female landowners in the region—and her husband Francisco Javier Sánchez, Plum Sauce reflects their commitment to independence, innovation, and quality. Grown high in the mist-capped mountains of Toraja Utara at elevations up to 2,000 MASL, this organic medium–dark roast captures the ancient power and cultural richness of its origin. Processed using the traditional Giling Basah (wet-hulling) method, the beans develop their signature bluish hue and a cup profile layered with molasses sweetness, herbal depth, warming spice, and baker’s chocolate.
